My Favorite Vegan Pasta Sauce

I can’t even remember where I got this recipe. I think it was from one of Oprah’s personal chef’s when she was doing healthy eating. Anyway, when the kids have spaghetti with meat sauce, I usually make this for myself to have instead. Enjoy!

2 T. Olive Oil
1 t. Minced Garlic (or more if you like)
1 cup of Fresh chopped tomatoes (sometimes I just use drained canned diced tomatoes)
1 cup of white wine
2 T. chopped fresh basil (or 1 t. dried basil)
1 Lemon

In a pan, heat Olive Oil over medium heat. Add garlic and saute until lightly golden (not burned!!!). Add white wine and let it reduce by half. Add tomatoes and basil and let it simmer while you cook the pasta. Squeeze the juice of one lemon before adding to pasta. You can use Parmesan cheese or go without, depending on if you want it vegan or not.

It’s light and tastes delicious!!!
