Grilled Veggie Sandwich Recipe

Anyone who knows me knows how much I love a good sandwich. Sandwiches are one of my favorite meals!

I would have to say that eating a really good hamburger probably tops my list. However, since I eat mostly vegetarian, I only indulge that craving about once a month.

That said, I have put together a really amazing grilled veggie sandwich that I enjoy just as much as a juicy burger! I hope you enjoy it as much as I do!

Grilled Veggie Sandwich

1/4 cup Mayonnaise
1/4 cup of pesto (I like basil)
olive oil
Roasted Red Pepper (I usually buy organic jarred red peppers, but you can roast your own)
1 Red Onion
1 Squash
1 Zucchini
Focaccia Bread
Goat Cheese

Slice Onion, Mushrooms, Squash and Zucchini. Toss with Olive Oil, salt and pepper and grill for about 3 minutes each side.

Toast (or grill) Focaccia Bread. Spread mayonnaise/pesto mixture on both sides. Load up the grilled veggies. Top with spinach, roasted red pepper and goat cheese. Serve.

I like to press mine in a panini press, but you can serve it any way you like.
